This Easy Egg Strata Recipe is a must try!


This is a recipe you need in your repertoire! It's a brunch time favouite because it can be made the night before. It saves you time in the morning so you have can enjoy the meal too. I promise you, this simple recipe will become a family favourite. Not only is this easy egg strata recipe great for a make-ahead brunch, it's perfect for any night of the week!


I've heard over and over, and I couldn't agree more that we get bored of the same old meals all the time. That's another reason to love this recipe! It's extremely versatile...switch cup the seasonings, veggies or cheese and have a whole different meal every time.


All you need to remember is - DOUBLE-DOUBLE!


Start with your milk (ie. 2.5 cups), then add double the amount of eggs (ie. 5 eggs) and finally add double the amount of bread (ie. 10 slices of bread). Now you can get creative with cheese, meat, veggies and seasonings or herbs.


Try this basic ham, cheese and asparagus recipe to start.

Ingredients

  • 10 slices bread

  • 5 large eggs

  • 2.5 cups milk

  • 1.5 cups shredded cheddar cheese

  • 1 cup chopped ham

  • 2 cups broccoli or asparagus, chopped

  • 2 green onions, chopped

  • 1/2 tsp each salt, pepper and garlic powder


Instructions

  1. Cut bread into bite size cubes and put into a large mixing bowl.

  2. In a medium size bowl, whisk eggs with milk.

  3. Add all other ingredients to egg mixture.

  4. Pour egg mixture bowl with bread and mix until all bread is soaked.

  5. Transfer into greased baking dish (9"x12") and spread out evenly.

  6. Top with extra cheese if desired.

  7. Bake immediately or let sit in refrigerator overnight.

  8. When ready to bake, preheat oven to 375F and bake for 1 hour, or until eggs are set.


*Now you can get creative with different ingredients and flavours!

Try these combinations:

  • Spinach, mushroom and feta cheese with fresh basil

  • Bacon, zucchini, cheddar cheese and fresh dill

  • Chicken, bell peppers and mozzarella cheese
